In honor of 'Choi Kimchi' founder, Portland family offers grants to support business owners

In 2020, Matthew Choi was killed by a man who broke into his apartment. His family started a grant for vendors at farmers markets where 'Choi Kimchi' got its start.

PORTLAND, Ore. — Three years ago, a Portland family suffered unimaginable loss. Portland business owner Matthew Choi was stabbed to death by a man who broke into his apartment.

Choi was well-known for Choi's Kimchi, a business that evolved from a small booth at the Portland Farmers Market over a decade ago to a staple found at many stores throughout the Northwest. Chong Suk Choi, Matt's mother, started the business with him using her traditional recipe. 

“It’s really special for me and for Matthew. He really loved the kimchi business and the farmer’s market," she said. 

Last year, his family created a grant in Matthew's honor and to support other small business owners. 

“We want to give back to some up-and-coming businesses who are trying to make it in the market," said Peter Choi, Matthew's brother.

Peter stepped in to help the family business after Matthew's death. 

“You don’t ever imagine it, you can’t ever think it, you can’t prepare for it," Peter said. "So, when it happens you’ve just got to pick up the pieces and go."

The Matthew Choi Farmer's Market Vendor Grant aims to reduce financial barriers for food and farm business owners by offering up to $1,500 grants to support their entries to local area farmers markets. 

Choi's Kimchi and the Portland Farmer's Market is now raising funds for a second year to continue the influential and entrepreneurial work Matt started in the food and beverage industry.

“We still hear stories today from other people," Peter said. "How he’s touched them, helped them and their business, how knowledgeable he was about it. Just to hear that, it really feels like his legacy is continuing."
